KEBBEH NAYYEH: Pound raw lamb meat (neck and armpit) with classic 7 spices, white onions, white pepper, marjoram, nutmeg, salt, and olive oil. Add bulgur, more salt, and olive oil. Continue mashing and shape the mixture with your hands. Decorate with cucumbers, tomatoes, green onions, and mint leaves. Serve with green onions, olive oil, and mint.

2. BEIT EL SETT

đŸ‡±đŸ‡§TABOULEH: In a bowl, combine chopped parsley, tomato, and onion. Add salt, sumac, bulgur, mint, and pepper. Drizzle with olive oil and lemon juice. Mix thoroughly using your hands.

đŸ‡±đŸ‡§SHANKLISH: Curdled, strained, and fermented sheep milk cheese rolled in thyme with tomato, onion, and parsley.

đŸ‡±đŸ‡§MAKANEK (ARABIC SAUSAGE): Prepare sausages with 80% sheep meat and 20% fat. Combine intestines meat with salt, pepper, wine, and a mixture of 18 spices that includes bulgur, tomato sauce, mint leaves, parsley, spring onions, olive oil, and pomegranate molasses. Tie the sausage links into small pieces and cook on the stove, adding pomegranate molasses on top.

đŸ‡±đŸ‡§HALOUMI: Grill chicken liver and heart with cherry tomatoes and thyme. Chop the grilled ingredients. Prepare a butter and garlic sauce, then grill again, adding lemon juice and pomegranate juice. Finish by adding pan-fried butter and garlic, along with chicken stock, coriander, salt, and pepper.

3. ABIR’S KITCHEN

đŸ‡±đŸ‡§GRAPE LEAF DISH: Fill grape leaves with a mixture of bulgur, tomato, onion, and parsley. Place them in a pot lined with grape leaves and parsley stems. Add sliced potatoes, onion, and tomato. Pour over the sauce made with water, tomato paste, seasoning blend, olive oil, and lime juice. Cook on the stove for 2 hours.

đŸ‡±đŸ‡§LAMB HEAD AND LEGS: Marinate lamb with oil, salt, pepper, paprika, and spices overnight. Toast almonds in ghee.

Chicken – 750 gms.
Oil – 1/4 cup
Butter-1tbsp
Onions – 2
Garlic -5 cloves
Turmeric powder 1/2 tsp
Coriander powder -1tsp
Cumin-3/4 tsp
Curry powder / baharat arabic spice mix – 1 tsp
Black pepper powder -3/4 tsp
Red Chilli powder- 1 tsp
Cardamom 2
cinnamon sticks -1 stick
cloves 3
dried lemon 2
bayleaf -2
salt to taste
bell peppers cut into squares-1
Tomato -1large
Tomato paste- 2 tbsp
Basmati rice – 2 cups

Hajj Nasr Sandwich Shop – By 6 am, when Beirut is about to wake up, Hajj Nasr is getting ready to close. We arrived at 5 am to make sure he still had food. The tebleh nayyeh – Raw meat, garlic, tomatoes, mint, and the soujouk – soujouk sausage, garlic, tomatoes, pickles – sandwiches were incredible. Total price – 15,000 LBP (.95)

Faysal Snack (https://goo.gl/maps/FidmkbQNjBDqUBxn9) – Great Lebanese pastries and breads. We ordered the halloumi loaf, plus some Man’ousheh (Manakish) topped with za’atar, and some spinach pastries. 19,000 LBP (.60) – Total price for everything

Hanna Mitri (https://goo.gl/maps/iBTb64g5qprq3z6s9) – If you mention ice cream in Beirut, this is the place that everyone knows and everyone loves – it’s a Lebanese ice cream icon, and it’s uniquely delicious from any other ice cream I’ve had in the world. It’s special without a doubt.

Al Soussi Restaurant (https://goo.gl/maps/acSHkHamuvaD1vNFA) – This is one of the most famous restaurants in Beirut, especially for breakfast. Their fattey and hummus is good, but nothing compares to their awarma and eggs.

Makari Sweets Shop – Home of mfata’a, which is a unique and rare to find nowadays rice pudding, tahini, and turmeric pudding.

AL HASA OASIS, SAUDI ARABIA – Welcome to Al Hasa Oasis, the world’s biggest oasis, and home to over 2 million palm trees, and endless amount of date palms! It also happens to be home to some very unique and rare Arabian food. Today we’re exploring some fo the local dishes, including Hassawi red rice – considered more precious than gold!

Breakfast – Before doing anything we started with a champions breakfast in Al Hasa – simmered lamb legs with special bread made with date syrup. Delicious and the perfect way to get started on this Saudi Arabian food tour.

Qaisariya Al-Ahsa Sou (https://goo.gl/maps/xVqY55jYUD5u3ahx8) – Al Hasa is extremely well known for its market, where you’ll find everything you need from spices to herbs to clothes to coffee. It’s been a market that’s attracted people from all around the region and traders for centuries. It was fascinating to learn from Fahad about the unique and common ingredients used in Al Hasa cuisine.

Rice harvest – We took a quick trip to a farm to see some of the hassawi red rice harvest
This can be quite a quick edit to see the hassawi red rice harvest. It’s only grown in the Al Hasa oasis, and it’s one of the world’s most expensive rice grains, and extremely rare. Local consider it more precious than gold, and it has huge nutritional value.

Farm for cooking and eating – The highlight of this experience was going back to the date palm farm where Fahad and friends cooked a huge local meal including the most delicious and rare Al Hasa foods that really showcase the incredible local culture. The spread of food and the variety was astounding – it was one of the best meals I had in Saudi Arabia!

RIYADH, SAUDI ARABIA – Welcome to Riyadh, the biggest city in Saudi Arabia and home to diverse people, and some incredibly delicious food. Today I’m taking you on an ultimate local Saudi Arabian food tour of Riyadh, we’ll be eating some of the greatest dishes, food you don’t want to miss!

Here are all the locations featured in this food review:

1. Fawal Abo Salem (https://goo.gl/maps/TyzPpWvigqEM5JcZ6) – We’re beginning this Saudi Arabian food tour in Riyadh with a staple breakfast – ful – mashed fava beans that likely originate in Egypt, but are widely popular throughout the entire region. Ful medames at Fawal Abo Salem for breakfast is some of the best in the entire city – and I was blown away by the quality and flavor, paired with the freshly baked bread.

2. Camel liver – I’m not totally sure of the name of this place, but they are famous for their fried camel liver, sauteed down with onions and peppers. It’s truly tasty, right off the hot griddle with fresh bread and a dash of hot sauce.

3. Alnaqaa Falafel & Hummus (https://goo.gl/maps/SzCLzQTAteZVUHc76) – To eat the best Falafel and Hummus and Riyadh, you have to go to Alnaqaa – it’s absolutely legendary, and it felt as though I was right back on the streets of Beirut. One of their specialties is a giant falafel stuffed with caramelized onions. And make sure you order the entire falafel mountain!

4. Kebda Restaurant (https://goo.gl/maps/6advt5emgE6eoUfRA) – This Riyadh food tour is not complete with only camel liver – another popular liver to eat is lamb liver, and this time it’s not served on a plate, but with bread, sandwich style. Some of the tastiest lamb liver you’ll ever try!

5. Sudah Restaurant (https://goo.gl/maps/FprxbXE6A4TdMmkdA) – To begin this food tour and to end this food tour, it was a privilege to spend some time at Sudah Restaurant to learn about Haneed, an Arabian food that at this restaurant originates from Aseer Province. They still make it the traditional way, loading parted out young lambs into an underground oven, layered with a specific type of hay that holds in the moisture and gives a distinct fragrance. The result is smokey lamb served over a mountain of rice, that literally melts in your mouth with the smoky fragrance of the hay. It was an unforgettable meal experience in Saudi Arabia!
